Making the temper
- Add a tablespoon of oil (any oil you use) to a pan. Add mustard seeds to it when it becomes hot.
- Add curry leaves and green chilly (or not, depending on your spice tolerance). Saute them for a few minutes.
- Add turmeric, salt, red chilly powder and hing and mix well.
Adding the rice
- Combine your cooked rice in this mixture and add peanuts to it.
- Add the juice of a lemon and mix well.

- Add a tablespoon of oil (any oil you use) and heat it.
- Once it’s hot, add mustard seeds, chopped onions, and tomatoes.
- Add turmeric, salt, and red chilly powder when the vegetables are well-cooked.
- Add cooked idli to the pot and mix well.
Voila, you’re done! It’s a great recipe that’s light due to the idli but nutritious due to the vegetables.
Upma is another Indian easy lunch recipe that you can enjoy. It is similar to the lemon rice recipe and takes only 10 minutes to make.
- Roast rava or semolina for five minutes on low flame. Once the rava turns light brown, switch off the gas.
- Prepare the temper like the one in the lemon rice recipe.
- Add chopped onions and tomatoes to your temper and cook them for a while.
- Add water to your pot and slowly add your roasted rava or semolina in batches to avoid lumps.
Your upma is ready. Enjoy your light and nutritious upma. It’s the perfect lunch that you can reheat and enjoy. You can add cashews or nuts to your upma, too, to add crunch.
